Continuing with my series of summer friendly recipes, I am bringing you an eye catching & refreshing lemonade recipe. This lemonade drink has a really vibrant color and unique sweet tangy flavor. I made this “Strawberry & Watermelon Lemonade” using my last batch of strawberries for the season. I had seen this video recipe for watermelon lemonade by Smita Rawat of HappyTummy2HappyHeart with Smita fame, and had that in mind to try it for my hubby.

One fine evening, when he returned home from office, I had all the required ingredients at hand plus the strawberries which I had bought the same afternoon. So, I tried this lemonade and it turned out to be very refreshing & made with all natural ingredients. This juice is a healthy option too than to have store bought sugar-laden juices to quench your thirst in this scorching heat. For the recipe, you’ll need:

Ingredients:

  • Watermelon – 10-12 small pieces
  • Strawberries – 5-6
  • Juice of 1 lemon
  • Sugar to taste
  • Salt/Juice Masala/Chaat Masala to taste
  • Chilled water/club soda – 1 glass
  • Few mint leaves chopped
  • Ice cubes

Preparation:

  1. Deseed the watermelon pieces and blend watermelon & strawberries in a blender.
  2. Sieve the mixture to get the fresh watermelon strawberry juice concentrate.
  3. Dilute this concentrate with chilled water/soda as per your preference.
  4. Add lemon juice, mint leaves, salt, chaat masala & sugar to taste and stir well.
  5. Add the lemonade in a glass and top with ice cubes.
  6. Garnish with a lemon wedge and serve chilled.

As you all know, I promised to share summer recipes over the coming few weeks, so today I am bringing you a recipe using the “King of Fruits” – Mango!!

Mango can be used in variety of recipes like Mango yoghurt, Mango gelato, Mango phirni, Mango ice cream and many more. But today, I am sharing a unique cake recipe using Mango – “Mango Semolina Cake”. This cake is extremely soft & moist and simply melts in your mouth. Moreover, this cake is healthier as compared to the other cakes as it is made of semolina aka sooji and uses very less oil. Since this cake does not have refined flour, it is very good for kids as well.

The recipe for this cake is taken from a dear friend Kaveri Obhan’s blog, “Pretty Little Things”. This cake is one of her most tried recipes. She shared this recipe last year on the Chef at Large group on Facebook and received tremendous appreciation. A lot of people tried this cake, including myself and were super happy with the outcome. This year, as the mango season stepped in, I decided to bake this cake again and it was loved by all in the family.

The cake is extremely easy to make and requires simple ingredients which are readily available in your kitchen at all times, so you should not wait for long to try this cake. Just follow the recipe to the T and you will not be disappointed with the outcome.

For making this beautiful scrumptious eggless cake, you’ll need:

Preparation Time: 20 mins.
Baking Time: 35 – 40 mins.
Serves: 1 Loaf Cake

Ingredients:
  • 1 cup of Semolina/Sooji
  • 1 cup Mango pulp
  • ¼ cup Neutral oil
  • ¾ cup Powdered Sugar
  • 1 teaspoon Baking powder
  • ½ tsp ground cardamom (optional)
  • ¼ cup chopped nuts of your choice for garnish (optional) (I used almonds & pistachios)

Instructions:
  1. Pre-heat the oven to 170 degrees Celsius.
  2. Mix the semolina with sugar, cardamom and baking powder.
  3. Next, add oil and mix well. Finally add the mango pulp and mix again. Let it sit for 15 – 20 minutes so that sooji absorbs the mango pulp and the batter gets little thick.
  4. Pour the batter in a greased cake tin and garnish with nuts of your choice.
  5. Place in the oven and bake for 30-35 minutes. Keep a close watch after 25 minutes, if it starts browning too quickly, lower the temperature a bit or switch off the top element of the cake.
  6. Check with a toothpick in the center of the cake to see if properly baked. If it comes out clean then remove immediately. If it is kept for a longer time, the cake will develop a crust on the top.
  7. Allow to cool completely and then cut and serve.

Notes:

  • The final color of your cake also depends on the quality of the mangoes used.
  • Ensure that the mango pulp is thick and not too watery, else you will need to keep the batter for a little longer till sooji absorbs the mango pulp and the batter gets little thick.
  • You can adjust the sugar in the cake depending upon the sweetness of the mangoes used.

Hi friends,

Hope you all liked my previous post for Litchi Cooler and tried it at home. Today, I would again be sharing an another unique flavored drink – PLUM COOLER. I tried this out of curiosity when I had this batch of plums lying in my refrigerator for so long and no one was eating them as they had a little thick skin and were not that juicy unlike their usual characteristics.

I usually like to eat these juicy fruits as it is but when they turn out to be disaster to eat them raw, I think of ways to use them up in innovative ways. Hence, I had to experiment with these plums as well & come up with this concoction. The drink came out to be really yum with a unique sweet & tangy flavor.

For this recipe, I am not mentioning any specific measurements & quantities as all the ingredients need to be added as per your own taste & they totally depend on the actual natural sweetness & juiciness of the fruit itself.

Moving on to the recipe, you’ll need:

Ingredients:

  • Plums
  • Sugar
  • Water
  • Black Salt
  • Ice cubes

Preparation Method:

  1. Wash and cut the plums into small cubes; and remove the seeds.
  2. Add some sugar and a little water to the chopped fruit and pressure cook it till 1-2 whistles.
  3. Let the mixture cool.
  4. Blend & strain the mixture and store the made concentrate in an air-tight bottle.
  5. To serve, put a little concentrate in a glass, add chilled water and a little sprinkle of black salt.
  6. Top it with ice cubes and serve chilled.

Note:

  • You can use Club Soda instead of water, in case you want a fizzy drink.
  • You can replace sugar with honey to make it more healthier.
  • You can add lemon juice as well to make it a plum lemonade.
  • You can add mint leaves for garnishing as well.

This post was long due since the last two months. Last month had been a little busy in terms of travelling & other personal commitments, hence the delay in posting.

As you all know, Summers are at their peak in New Delhi right now & temperatures are soaring high. Come summers and you don’t want to cook elaborate meals or eat much because of heat and feel like having something liquid and chilled all the time. So, this time I thought of doing a few posts for perfect summer dishes and would be sharing a few such recipes in the coming days. So, stay tuned to find some amazing recipes like Mango Semolina Cake, Watermelon Lemonade, Plum Cooler, Oreo Shake and so on.

Today, I am sharing a summer drink using this amazingly juicy seasonal fruit, Litchi. Litchis are very much in abundance these days & these juicy gems are good to eat as it is or you can make this yummy cooler drink from them.

For this recipe, I will not be sharing exact quantities as every ingredient can be adjusted as per your preference depending upon the juiciness and sweetness of the fruit and honestly, even I made the same without the exact measurements.

Moving on to the recipe, you’ll need:

Ingredients:

  • Few Litchis (without seed)
  • Water
  • Sugar as needed
  • Ice cubes

Preparation Method:

  1. Blend all the ingredients in a blender. Sieve the drink.
  2. Add more ice cubes in a glass and pour the drink.
  3. Serve and enjoy it chilled.

Notes:

  • You can use Club Soda instead of water, in case you want a fizzy drink.
  • You can replace sugar with honey to make it more healthier.
  • You can add lemon juice as well to make it a litchi lemonade.
  • You can add mint leaves for garnishing as well.
  • You may skip the sieving part in case you like your drink pulpy.

Hello Folks..!!

Till date I have only posted about desserts or savoury dishes, but this post is different from all my previous posts. Today, I will be sharing the recipe for a super simple dip using a very healthy ingredient, our very own HUNG CURD. I will be sharing the other dip in the pic shown above in the next post for Cream Cheese & Walnut Dip.

This dip is a great party pleaser and is perfect for your potluck parties, tasting parties, dinner parties and all sorts of get-together. This dip can be made well ahead of time and stays good for 1-2 days in the refrigerator. The dip goes well with all sorts of finger foods, nachos, chips, kebabs, and cutlets. I have made this dip a lot of times till now and this dip has never ever failed me in front of my guests. I had made this dip a few months ago for a party hosted by my brother for his friends; and believe me you, this dip was an instant hit at his party and his friends polished off the entire bowl of this dip in no time.

For this recipe, you’ll need:

Ingredients:

  • 1 cup hung curd
  • 1 small onion, chopped very finely
  • 1 small capsicum, chopped very finely
  • Salt to taste
  • Black pepper powder to taste
  • 1-2 tsp Amul fresh cream

Method:

  1. Beat hung curd for a minute to make it smooth and creamy.
  2. Mix everything together except cream till consistent and creamy.
  3. Add Amul cream to adjust the dip’s consistency.
  4. Garnish with few coriander leaves and serve chilled with vegetable sticks, crackers, nachos, potato chips, or potato wedges.
Note: Make sure onion and capsicum are chopped really finely and should not be chunky. Hang the curd in a muslin cloth for 2-3 hours to get rid of all the water and your super creamy hung curd is ready.

I know I am posting after a very long time & I have not been able to make a post regularly, as my writing had taken a back seat for a while and there was some technical glitch with my blog. I was not able to upload the pictures on the posts. I really apologize for the same and I will try to be more regular with my posts.

Today I am back with a recipe for a very fresh summery salad made with Moong Sprouts. This salad is a great crowd pleaser, so go and make it for your potlucks, dinner parties or lunch parties. This salad is so versatile that it goes well with almost everything and at any time of the day whether you serve it in breakfast, lunch , dinner or with drinks as well. I had made this delicious sprouts salad for a get together of our friends at my mom’s place.

This salad is super simple to make and and no oil in this salad makes it super healthy to eat. You can make this salad with ready made sprouts or you can make your own sprouts at home. I made the salad with the ready made ones. For this salad, we will steam or boil the sprouts till they are tender, but if you like a little crunch, you can leave them half cooked. This salad has its own freshness and crunchiness from all the veggies we add to it. You can get creative and add as many veggies you want & like, but I will be sharing my version here.

Serves: 4-5 people
Preparation Time: 10 mins
Cooking Time: 10 mins

For the recipe, you will need:

Ingredients:

  • 2 cups Moong Sprouts
  • 1 Tomato, finely chopped
  • 1 Onion, finely chopped
  • 1 Boiled Potato, diced into small cubes
  • 1 Cucumber, finely chopped
  • 1 Green Chilli, finely chopped (optional)
  • Juice of 1 lemon
  • Salt to taste
  • A pinch of black pepper powder
  • 1 tsp Chaat masala
  • 1 tbsp Chopped coriander leaves for garnishing
  • A few Lemon slices for garnishing

Method:

  1. Steam/Boil the sprouts in the microwave for 4-5 minutes till they are tender. We have to make them tender for this salad. Strain them and keep them in the strainer and let them cool.
  2. In a bowl, mix all the salad ingredients and give them a nice toss. Do a taste test and adjust seasoning and lemon juice. Garnish with coriander leaves and lemon slices.
  3. Your super simple and healthy salad is ready. Serve it chilled or at room temperature.

Oats Flaxmeal Cookies/Chocolate Chip Lactation Cookies

Hello friends..!!

This post is dedicated to all those new lactating moms out there, as these cookies are believed to increase the milk in the lactating mothers. My bhabhi, Yashima, who is also a new mom of an extremely cute and adorable child, asked me if I can make these cookies for her. She had come across this recipe for lactation cookies on a blog named “blogs.mom365.com“. I was honestly quite happy that I will finally try my first ever batch of cookies & that too for my most favorite nephew (he will only get the benefits of these cookies indirectly :-) )

I immediately looked at the recipe sent by her and checked if I have all the ingredients available in my kitchen. I gathered all the ingredients required and carried on with the recipe to try my first batch of cookies.

I also added almonds to half of the batter and made a few cookies with the added goodness of almond flakes in them, making them more healthy and delicious.

Cookies came out so delicious that no one could believe they are homemade. They came out exactly like the ones we get in good coffee shops. I made two types of cookies – chewy & crispy. The only difference to make the cookies chewy & crispy was the baking time, as the crispy cookies took a little long to bake.

I baked about 65-70 cookies with this recipe & trust me you, I could only deliver half of it to my bhabhi the next day, because they just got vanished in my house only. No No, don’t be surprised no one is lactating in my house; it’s just that these cookies can be eaten by everyone & not only lactating mothers.

Now, moving on to the recipe, the original recipe called for brewers’ yeast and steel cut oats, both of which were not available easily and I could not get my hands on them. Hence, I substituted the steel cut oats with the regular Quaker oats and replaced brewers’ yeast with some baking powder. Rest of the recipe and ingredients were the same as the original recipe. Baking time also varied for me because of my oven temperature and size. Keep an eye on the cookies to get the desired color and crispiness after the initial 12-15 minutes.

For the yummiest lactation snack, you’ll need:

Ingredients:

  • 1 cup butter
  • 1 cup sugar
  • 1 cup brown sugar
  • 4 tablespoons water
  • 2 tablespoons flaxseed meal (don’t skip this step) (I ground the flaxseed into a fine powder to make flaxseed meal)
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 1/2 tsp baking powder
  • 1 teaspoon salt
  • 3 cups Quaker oats
  • 1 cup chocolate chips
  • A handful of almond flakes/chopped almonds (optional)

Preparation Method:

  1. Preheat the oven to 350°F/180°C.
  2. Mix the flaxseed meal and water and let sit for 5-10 minutes.
  3. In a big mixing bowl, cream the butter, sugar, and brown sugar till creamy and fluffy and triple in volume. Keep scraping down the bottom of the bowl.
  4. Add the eggs one by one and mix well.
  5. Add the flaxseed mix and vanilla essence, and mix well.
  6. Sift together the flour, baking powder, baking soda, and salt.
  7. Add the dry ingredients to the butter mixture and fold well till everything is mixed together. Do not over-mix.
  8. Stir in the oats and chocolate chips and mix thoroughly.
  9. You can add almond flakes also at this stage.
  10. Scoop the cookie mixture onto baking sheet, approximately 1” balls.
  11. Bake for 15-20 minutes or till you get the desired crispiness and color. If you want a chewy centre, bake for about 12-15 minutes only and if you want a crispy centre, bake for a little longer.
  12. Allow the cookies to set for a few minutes before removing from the baking tray. Let them cool and store in air tight container. Cookies will stay good for a month, but they will not last only till that long. :)
  13. Enjoy your yummy cookies with a glass of milk or a cup of tea/coffee.
